La Vallée Verte

La Vallée Verte is a fine-dining gourmet restaurant that bases most dishes on seasonal produce from local suppliers and defines its cuisine by intensive flavors. The house has held a Michelin star since 2019 and menus can change at short notice. The dining rooms in Schloss Hohenhaus present a refined, elegant atmosphere suited to tasting menus and wine accompaniment. The cooking offers a unique haute cuisine experience rooted in classic French haute cuisine, tempered by contemporary influences and techniques drawn from top international kitchens and inspired by aromas and scents from the world’s best kitchens. In June 2025 the multi-award-winning chef Alexander Mayer and his team took over the culinary and philosophical direction and moved the restaurant into newly and elaborately designed premises; Alexander Mayer is Executive Chef. Specialties include game from the estate forest; seasonal fruit and vegetable compositions from Demeterhof Herleshausen; poultry and eggs from Nordhof Willershausen; dishes built around apples, walnuts and foraged wild plants; seafood preparations such as salmon and prawns; and sommelier-curated wine pairings guided by Ivo Struckmeyer.
