L'Argousier

L'Argousier is a gastronomic restaurant in Volmunster, in the heart of the Pays de Bitche, housed within the Parc naturel régional des Vosges du Nord. The house is presented through the vision of Jonathan Birkenstock, whose cuisine reflects his experience, travels and encounters. The restaurant is recognised in guides (Selected by Michelin) for its modern cuisine approach and its market-driven, seasonal philosophy. The kitchen is constantly evolving, producing graphic, meticulously composed plates that pursue a precise balance between flavour and texture. Dishes display a careful interplay of components and an exacting sense of composition. The house offers two unique tasting menus, served in five or seven sequences, with compositions that change weekly to follow the seasons and the rhythm of local producers. The team uses exclusively fresh products and bases dishes on local terroir and market availability, aiming to surprise diners with unexpected combinations while remaining attentive to guests' dietary constraints.
