Merkles Restaurant

Merkles Restaurant is a family-led restaurant group on the Kaiserstuhl. Owners Simone Merkle‑Dinger and Thomas Merkle promote quality, passion for food and drink and the message to enjoy good living at Merkles. The business holds Michelin distinctions: the main restaurant bears a Michelin star. The owners were named Genussbotschafter of Baden‑Württemberg in 2023. In addition to the fine‑dining restaurant the team operates the more casual Pfarrwirtschaft and sells house products—dressings, salts and preserves—through their shop. The kitchen philosophy is to make guests happy by using almost exclusively fresh products from the region, with considered exceptions for seafood and selected international meat and poultry specialties. The kitchen practices a contemporary, internationally influenced cooking style with strong emphasis on seasonal, regionally sourced ingredients. Dishes are built on high‑quality raw materials and prepared with careful, precise technique to deliver focused taste experiences, and the menu follows the rhythm of the seasons. House specialties include Merkles Hausdressing, Spätburgundersalz, Orangensalz, Kürbis‑Ingwerdip and Gützili Kirsch‑Schokolade.
