Nori

Nori is the Michelin-starred restaurant of the Brittany & Spa in Roscoff. The kitchen privileges local, reasoned sourcing to highlight the region’s marine and land products and pairs Asian techniques with Breton ingredients, presented by a team focused on craftsmanship and seasonal expression; the restaurant positions itself as both a pause between excursions and a destination. Situated within the Brittany & Spa manor by the sea, Nori offers a refined, intimate dining experience rooted in the hotel’s historic 14th‑century architecture and coastal surroundings. The kitchen draws on the chef’s Japanese experiences and his Breton childhood to create a modern, travel‑inspired gastronomic journey that emphasizes balance of flavours; the cuisine blends modern techniques with regional Breton produce and strong Japanese influences, focusing on seasonal ingredients and close collaboration with local producers. Loïc Le Bail (Chef) has been recognised regionally, receiving the Gault&Millau d’Or 2025 and previously awarded three toques.
