The restaurant's concept revolves around quality products and local sourcing, partnering with regional producers for bread, beverages, and other ingredients. Beef takes centre stage, with a particular focus on Parthenaise breed beef sourced from Didier and Julien Dupuis of La Mardière Farm in Saivres.
