Pureté is a Michelin-starred gastronomic restaurant in the heart of Vieux-Lille at 79 rue de la Monnaie. The house presents a modern, creative cuisine built around seasonality, rigorous control of cooking and bold, surprising flavour combinations. It positions itself as a relaxed yet exacting fine-dining address where sincerity, conviviality and a pursuit of excellence shape the guest experience. Menus are offered in multiple lengths (3–6 courses) under names such as Instinct, Pur, Brut and Matière, and guests may add curated wine pairings to their tasting menus. Housed in one of the oldest lanes of the Vieux-Lille, the restaurant mixes contemporary design with the charm of old brick facades; the dining room offers an intimate, warm and convivial atmosphere suitable for romantic dinners, family meals or business dining. The cuisine maintains a strong product focus with precise cooking and seasonal sourcing. Dishes emphasise surprising yet harmonious flavour combinations. Gérald Guille created and leads the restaurant; he draws on his experiences and his roots on the Opal Coast to prioritise products of the sea while exploring a personal library of flavours to find original accords.
