Ressmann's Residence

Ressmann's Residence is a family-run restaurant and hotel established in 1985 by Günther Ressmann; Ressmann trained as a pastry chef and cook and was recognised early as the youngest kitchen master in the Saarland. The house blends modern Mediterranean cuisine with clear French and Italian influences while honouring its founder's Austrian roots. The team emphasises fresh, regional ingredients and honest craftsmanship; the property added an on-site hotel in 1995 and a terrace in 1996, and today the Ressmann family manages the business with Günther stepping back from daily kitchen duties. The restaurant is listed as Selected in the Michelin Guide. The dining rooms are stylish and elegant, designed for a refined evening; the property also offers a cosy vinothek and a summer garden bistro with a Mediterranean stone oven, a charcoal grill and a terrace for outdoor dining. The cuisine is contemporary, combining French and Italian techniques with Mediterranean flavours; menus change monthly and weekly, include special seasonal offerings for occasions such as Easter and Good Friday, and selected recipes are published, while service delivers a refined, ingredient-driven approach with attentive wine pairing and tailored private-event menus. Head Chef Markus Schmittke has led the kitchen since 2020, bringing over 20 years' experience from the Brandenburger Hof in Berlin and the Palace Hotel Munich and adding an Italian–Austrian accent to the menu. Specialties include Rinderconsommé with semolina dumpling and root vegetables; Tatar of Norwegian salmon with asparagus and pumpernickel; Argentinian beef fillet tips “Bourguignon” with tagliatelle; Linguine alla Norma with tomato and aubergine; Tarte Tatin with homemade vanilla ice cream; and seasonal fish and regional meat preparations, for example bison from the Bliesgau, which has been mentioned in press coverage.
