Restaurant Julien Binz sits in the wine village of Ammerschwihr on the Alsace wine route, a few minutes from Colmar. The house is run by Sandrine, a gastronomic journalist, and Julien Binz. The restaurant holds a Michelin star (awarded in 2017) and is recognised with three Toques by Gault&Millau. Julien Binz draws on more than 20 years in the Alsatian restaurant scene and composes a seasonal cuisine that evolves with the time and products of the region. An elegant, contemporary dining setting occupies a historic Alsatian wine‑village property, with decorative touches that reference local culture and art, notably a fresco of Fragonard’s Fountain of Love. A welcoming front of house is led by the owners. The cuisine presents contemporary French dishes that balance modernity and authenticity, with a strong emphasis on seasonal products and on preserving the true taste and quintessence of each ingredient.
