Sabir is situated on the slopes of Mount Etna in Zafferana Etnea, Sicily, within a traditional Sicilian courtyard surrounded by lush greenery. This setting offers a serene and authentic atmosphere that reflects the region’s natural environment. Under the leadership of Chef Patron Seby Sorbello, born in Zafferana Etnea in 1975, the restaurant showcases a creative Sicilian cuisine that emphasizes seasonality and the unique products of the Etna volcano region. The menu fuses flavors, aromas, and sensations drawn from the Ionian coast, sea, and volcanic terrain, telling the story of the Etna territory through dishes crafted with meticulous care. Signature specialties include Arancino agli asparagi selvatici, Filetto di suino nero with chestnut and Zafferana honey sauce, Uovo a mallassata, La Norma, Minestra di fave with spaghetti and wild fennel, Sarde a Beccafico, and pistachio Arancini. Chef Sorbello, recognized with awards such as the 2014 Solidus 'Chef of the Year' and an honorary Gastronomic Sciences degree from the University San Raffaele of Rome, emphasizes that Sicilian cuisine is shaped by emotions as much as by ingredients.
