Opened in 2022 on the banks of the Odet in Quimper, SAO presents creative, plant-forward, iodized cuisine inspired by the Breton coastline and seasonal produce. The house emphasises produce from the sea and vegetable-led preparations that reflect the chef’s maritime roots and his philosophy "Cuisine d’Instinct, Cuisine d’Instant", and it is listed in the Michelin Guide and awarded two toques by Gault & Millau. The restaurant sits at the edge of the Odet river and features an intimate, simple contemporary dining room focused on the culinary experience. SAO operates monthly-evolving tasting menus with multiple set-menu options that combine vegetal preparations, marine ingredients and freshly sourced seafood. The cooking is modern and instinctive, centred on the seasonality and terroir of Brittany’s coastline. Kevin Gourret, native of Bénodet and son of a fisherman, trained and worked in luxury establishments in Courchevel, Saint-Tropez and Saint-Barthélemy and then spent seven years at Le Goyen in Audierne prior to opening SAO. Specialities include langoustine, seasonal fish dishes and plant-forward seafood combinations, alongside the Menu Plaisir (four-course), Menu Inspiration and Menu Signature multi-course tastings.
