Vol-Ver is a family-led restaurant in Marke, Belgium. Sharon and Sébastien run the warm, welcoming venue. The kitchen is led by Sébastien, who trained at Hotelschool Koksijde. He gained experience in the kitchens of Comme Chez Soi, Hof van Cleve, Pierre Gagnaire and 't Convent and completed stages at Hertog Jan, Stephan Destrooper and Quique Dacosta. Vol-Ver has been recognised with one Michelin star, and the history and the chef’s pedigree are central to what makes the restaurant distinctive. Guests are invited to book via the restaurant’s online reservation system. Cuisine is contemporary French focused on creative, innovative dishes and modern techniques. The team positions itself between contemporary technique and French culinary tradition. The menu philosophy centres on renewal and storytelling through flavour and offers carefully considered multi-course experiences. Dishes carry a personal, artisanal touch reflected in the tasting experience presented as tasting-style fine-dining.
