Wildflower is a neighborhood-driven restaurant in Denver’s Lower Highlands. Its founding story honors Marigold de la Rosa, who blended Mexican and Italian horticultural and beekeeping traditions to shape the restaurant’s narrative. Wildflower partners with Colorado farmers and producers and highlights sustainably sourced proteins, natural wines, local meads and thoughtfully crafted cocktails. The restaurant occupies Gravity Haus Denver and its bar program mirrors the kitchen by offering crafted libations alongside seasonal plates. Wildflower is MICHELIN Recommended. Wildflower presents a community-focused dining and bar space reflecting the Lower Highlands’ residential, artful and cocktail-bar culture. Dining areas are intimate and hospitality-forward, suited to gatherings and events. The kitchen celebrates nature, seasonality and the Western landscape through a predominantly Italian lens. Cooking is contemporary and deeply seasonal with an ingredient-driven, plant-forward philosophy that draws on the neighborhood’s Italian and Mexican culinary heritage. The menu evolves with the seasons. Aiden Tibbetts leads the kitchen; he is a Denver native and received the 2025 MICHELIN Young Chef Award. Specialties include Avocado Toast, Gravity Bowl (heirloom grains), Chorizo Breakfast Burrito, Coconut Chia Seed Pudding and the Haus Breakfast.
