YUSHIN has been recognised by the Michelin Guide as a selected venue for Japanese cuisine in Neuilly-sur-Seine. The kitchen's menu philosophy centres on seasoning and preparation that highlight the freshness of daily arrivals. Flexibility in the carte reflects changing, carefully chosen produce and a commitment to refined, authentic flavours with subtle originality. Head chef Shuhei Yamashita trained under the influence of his father, who owned a restaurant in Japan. Yamashita later held head chef positions at Kinugawa (Paris 1er) and at RAN (Paris 8ème) from its opening. He also shares his knowledge of Japanese cuisine through his YouTube channel "Cuisine YAMASHITA style."
