Hiu is a fusion cuisine restaurant situated in a tranquil area of Cambrils, Tarragona, Spain. It blends high gastronomy with nature by focusing on organic ingredients and seasonal, locally sourced produce. The menu is rooted in Asian culinary traditions from Thailand, India, and Japan, with a modern approach that features homemade fermented condiments such as kombucha, miso, and kimchi. This commitment to natural fermentation forms an essential part of their tasting menus. The intimate dining space accommodates 22 to 28 guests, creating a serene and focused atmosphere. Chef Sergi Palacin, whose background combines local roots with international experience, leads the kitchen with technical skill and creative innovation. The menu evolves with the local gastronomic calendar, showcasing dishes like chicken satay croquette, green curry crab and sea bass tartlet, and massaman veal tongue. Complementing the food is a curated wine selection of around 110 references, alongside fermented beverages including their own ginger beer. An artisanal liqueur infused with subtle curry flavor, developed with La Destilateca, adds a refined touch to the liquid pairings.
