Castor, a modern French restaurant in Beveren-Leie, distils gastronomy to its essence to let each guest enjoy refined food in a relaxed, no‑nonsense atmosphere and presents an innovative gastronomic experience that is contemporary yet rooted in terroir; it holds two Michelin stars. The dining room offers a warm, "less is more" aesthetic and a casual vibe, with an unpretentious welcome and attentive service. The restaurant highlights terrace and room impressions through visual media, and front‑of‑house is headed by gastvrouw Stefanie Vandewalle, who since 2016 has emphasised warm, low‑threshold service and a welcoming room design. The cuisine is modern French with a product‑first, seasonal approach; dishes are refined and contemporary, built from high‑quality regional ingredients and prepared with respect for terroir and the short supply chain. Maarten Bouckaert is chef; he trained and worked at Hof van Cleve, De Karmeliet and The Fat Duck before launching his own culinary project at Castor. Specialities include the Castor tasting menu, the Root, Herb & Greens vegetarian menu and seasonal dishes sourced from local producers.
