Jerome

Jerome is a new bistro in Diest offering a refined take on French-Belgian cuisine. Its chef has trained at Spermalie after initially studying accounting and has built experience at Het Land aan de Overkant, Tafel Rond, Brasserie Silo's and the two‑star restaurant Colette. With the opening of Jerome he fulfils his dream of full control over the guest experience and the restaurant's direction. Alexe Matthijs manages the dining room and the wine selection; Laurens Van Gelder is the chef’s right hand. Jerome is "Selected" by the Michelin Guide. The dining room presents a contemporary bistro atmosphere with carefully chosen details. The team emphasises a welcoming, curated and total dining experience. The kitchen roots its cooking in French-Belgian tradition, focusing on high-quality dishes that are simply presented, refined and executed with craftsmanship. Jente Van der Stappen is the chef. Specialties include fried calf sweetbreads with caramelized onion; scallop with Jerusalem artichoke, truffle and hazelnut; sea bass in salt crust (shared, price per person); monkfish à la Grenobloise; shrimp croquettes; chocolate moelleux.
