Portanova Restaurant, founded in 2021 in Urbino, occupies a space near one of the city’s historic gates. The single dining room integrates the kitchen beneath an ancient arch, producing an intimate setting where cooking and service flow seamlessly together. The atmosphere balances heritage and modernity, mirroring the restaurant’s philosophy of slow, deliberate progress. The cuisine beautifully represents the Marche region through contemporary Italian techniques. Local ingredients and culinary traditions are thoughtfully blended with innovation in carefully composed tasting menus. Signature dishes include Cacciotta di Urbino cheese paired with eggs cooked at 83°C and fresh truffle, Adriatic prawns on a crescia sfogliata taco with lime mayonnaise, and wild boar filet accompanied by smoked herring caviar. Chef Giuseppe Portanova, born locally in the late 1980s, channels regional culture and products gained from extensive training alongside his brother. Together with his wife Silvia, who leads the dining room with warmth and a connection to local producers, the restaurant serves as a voice for Urbino’s culinary identity.
