Dodici Fontane is situated on the slopes of Mount Etna within Villa Neri, offering a refined dining environment that blends natural beauty with contemporary design. The restaurant’s setting reflects the surrounding landscape, creating an elegant but inviting ambiance. Chef Elia Russo leads the kitchen, focusing on modern Sicilian cuisine that highlights authentic local ingredients through inventive techniques. The menus include a Memories Menu featuring his signature dishes, as well as specialized Land and Sea menus that explore terrestrial and marine flavors. Russo’s approach emphasizes respecting and elevating each ingredient’s natural character, often incorporating organically grown elements. Signature dishes include marinated anchovies with homemade nduja and herring caviar, salt-crusted white fish accompanied by vegetable caponata and beurre blanc, and veal served with tuna sauce, Sicilian anchovy extract, and wild fennel oil. Other offerings showcase red mullet with toasted breadcrumbs, Nebrodi truffle, and slightly spicy jus, as well as Carnaroli rice with Siracusa lemon and prawn jus. Desserts such as chocolate with black cherry and long pepper, alongside a revisitation of Sicilian cassata, complete the tasting experience.
