Equilibrio, situated in Dolcedo, Italy, is a Michelin one-star restaurant housed in a historic former mill known as "Il Mulino." The setting merges tradition and elegance, featuring original milling machinery as design elements alongside refined décor, all positioned alongside the Prino stream. This connection to the past enriches the intimate dining experience. The restaurant exclusively offers two tasting menus reflecting Ligurian culinary roots blended with contemporary techniques. The six-course "Equilibrio" menu, optionally extended to seven courses, delivers a balanced and comforting narrative. Alternatively, the nine-course "Follia" menu presents a creative and playful surprise without descriptions. Menus change daily, adapting to seasonal and market availability, with no à la carte options. Chef Jacopo Chieppa, born in 1991, leads the kitchen drawing from his experiences in multiple Michelin-starred settings including Mirazur. Alongside his partner Melania Cammalleri in the front of house and hospitality expert Davide Amadore, the team crafts a sensory journey grounded in curiosity, respect, and determination.
