Granoturco Bistrot

Granoturco Bistrot, located in Castagnole Piemonte, was founded by Chef Gian Marco Russo and his wife Merve Ilicak Russo, who manages the restaurant. Drawing on Gian Marco’s international culinary training and experience—including awards in Istanbul and service at a two-Michelin-star kitchen in Shanghai—the couple opened Granoturco in 2020 to bring refined Piedmontese cuisine back to their home region. The bistro’s interior blends youthful and modern design elements with rustic comfort, creating a cozy yet elegant ambiance set in the countryside. This contemporary setting complements the restaurant’s focus on seasonal, sustainable ingredients and traditional local recipes elevated by Chef Russo’s global influences. Granoturco’s menu highlights Piedmontese specialties such as Piedmontese breed beef tartare with egg yolk and bagnetto verde, homemade tajarin with hare ragout, and filetto alla Rossini featuring black truffle and foie gras. The kitchen emphasizes regionally sourced products paired with fine Piedmontese wines.
