Trattoria del Cimino is nestled within the oldest noble palace in Caprarola, dating back to 1370 and once owned by the medieval Anguillara family. Established in 1895, the restaurant carries a legacy recognized in the 1895 Monaci Guide of Rome and Province. Its recent 2024 restoration unveiled frescoes with gold leaf and Etruscan marble, reinforcing the palace’s historic noble atmosphere. The kitchen serves dishes inspired by ancient Etruscan and Roman culinary traditions, refined across five generations. The menu focuses on local, seasonal ingredients and includes three tasting menus centered on the territory, iconic recipes, and the bounty of local gardens and lakes. Signature dishes are Pici all’amatriciana with San Marzano tomatoes and Pecorino Viterbese, Cinghiale alla Viterbese slow-cooked with olives and bay leaf, and a hazelnut cake featuring Tonda Gentile Romana nuts with Marsala zabaglione. Chef Maria Assunta Stacchiotti has led the kitchen since 1997, blending family heritage with expertise gained alongside starred chefs. Sommelier Samuele Calistri curates an award-winning cellar focused on terroir-respecting wines, enhancing the venue’s reputation in prestigious gastronomic circles.
