Osteria Vecchio Borgo, established in 2010 in Demonte, Valle Stura, celebrates the rich culinary traditions of Piemonte and Liguria under the guidance of founders Antonietta, Anselmo, and Valentino. Relocated in 2015 to a historic center in Cuneo, the family-run restaurant integrates local specialties such as Fassona beef and Carmagnola grey rabbit with select products from France and Iceland, reflecting a broad yet regionally rooted menu. The kitchen, led by Chef Antonietta with decades of Ligurian experience, is complemented by Valentina’s expertise in pastries and desserts, while Anselmo and Valentino manage the front of house and wine cellar. Set within a 17th-century building, the dining room features restored original architecture including a wooden coffered ceiling, walnut parquet flooring, and a vaulted cross ceiling, contributing to an intimate and elegant atmosphere. Limited seating ensures personalized service, with a summer outdoor area overlooking a historic alley. The cuisine focuses on slow food principles, utilizing seasonal, local ingredients and traditional recipes from Piemonte and Liguria, enhanced by subtle international influences to create an authentic yet refined dining experience.
