The kitchen is led by Jack, a self‑taught cook who studied Escoffier’s Guide Culinaire during a year in France and who worked in the kitchens of Le Jardin des Sens (Montpellier) and Restaurant Alain Chapel, also bringing front‑of‑house wine experience. The house follows a zero‑waste philosophy, and its wine list prioritises regional French and European producers working organically and biodynamically. Argile is referenced in The MICHELIN Guide and is rated "Very Good" in the Good Food Guide. The dining room is an intimate chef’s‑table setting in Marchmont that seats just nine guests for regular service and is designed for a focused, communal tasting experience.
