Bacôve

Bacôve is a gastronomic restaurant located in Saint-Omer in the Pas‑de‑Calais. The name Bacôve evokes the traditional boats that ply the marsh canals of Saint‑Omer and expresses the restaurant’s deep rooting in these human‑shaped landscapes and their local terroir. The kitchen follows the rhythm of the four seasons: menus are composed week by week in strict accord with what the terroir offers, and the team highlights regional production for items such as fruit juices. The restaurant opened as a new gastronomic address on 8 December and has been awarded one Michelin star. The dining room offers a nature‑inspired, calming atmosphere evoking the marsh canals: a palette of greens, wooden furniture and dimmed lighting create a serene, restful setting. The cuisine is modern and product‑focused, built around seasonal sourcing and terroir‑led inspiration, with refined land‑and‑sea combinations and desserts that revive nostalgic family recipes. Camille Delcroix (Chef) leads the house alongside his wife Carla; Camille places particular emphasis on desserts inspired by the grandmothers of the North. Specialties include tarte au sucre, yaourt maison with crunchy cassonade, gaufre bruxelloise with beetroot confit, terre et mer dishes and seasonal menus such as Menu Bacôve, Menu Escute and Le Baudequin du Marais.
