Dimora Ulmo is located in the historic center of Matera on Via Pennino, a street renowned for its 18th-century aristocratic heritage connected to the Ulmo family. The restaurant reflects a strong bond to Basilicata’s culinary roots, reinventing traditional flavors through contemporary Italian cooking techniques. The dining space occupies an elegant palazzo, where a stylish interior design merges historic architecture with a refined gourmet atmosphere. Art and design play a crucial role in shaping the environment, creating an inspiring setting suited to discerning diners. Under the leadership of Michele Castelli, a Matera native with experience at Osteria Francescana and Ristorante Italia in Istanbul, the kitchen focuses on thoughtful, inventive dishes that honor local ingredients.
