Don Cesar is a family‑run five‑star gastronomic hotel on the Gulf of Porto Vecchio, opened in June 2012 and built by Édouard Cardi; its principal gourmet Italian restaurant is cited by the Michelin Guide and described on hotel site as Michelin‑starred. The property has 39 sea‑facing rooms and suites, seven private villas, Nuxe spa, lounge bar and new Kids Club. Conceived and furnished by Édouard and Marie‑Ange Cardi, the hotel is managed by second generation. Set in a pine grove, with interior design crafted by its founder, the restaurant's bay windows and panoramic terrace afford sweeping sea and old‑town views; the dining room is elegant, intimate and luminous. Outdoors an infinity pool appears to merge with the Mediterranean and La Paillotte offers beach‑facing dining for a relaxed summer vibe. The kitchen melds Corsican and northern Italian techniques into Mediterranean‑inspired, carefully composed, colourful plates. The chef and brigade emphasise house‑made pasta and local produce; menus feature seafood from the day’s catch and Corsican porc noir A.O.C. Specialties include lobster ravioli with bisque; spaghetti alla chitarra with squid ink and local langoustines; passatelli with summer black truffle from Norcia; risotto alla Milanese with Osso Buco ragù.
