Inka

Inka is Verona’s first Peruvian restaurant, founded in 2021 by Chef Gabriel Zevallos. Drawing inspiration from a return trip to Peru, Chef Gabriel melds tradition, creativity, and innovation to celebrate Peru’s diverse culinary heritage. The menu highlights the country's biogeographical variety, referencing flavors from the Pacific coast, Andes, and Amazon rainforest. The kitchen focuses on fresh, authentic ingredients sourced locally and from Peru, aiming to craft a genuine and memorable dining experience. Chef Gabriel, with a background in chemical engineering, applies his scientific knowledge and passion to reinterpret traditional Peruvian dishes with modern techniques. Signature preparations include classic ceviche and Nikkei-style fusion ceviche, along with Sierra ceviche and Salchipapa featuring swordfish. Inka also features a Peruvian pisco bar and offers tapas for aperitivo, emphasizing the social and spirited nature of Peruvian dining.
