La Pomme d'Or

La Pomme d'Or is a small, Michelin one‑star restaurant in Sancerre presenting a concept called "Gastronomie Intuitive." Menus harmonise seafood directly sourced from Brittany with produce from the Sancerre terroir and pair inventive dishes with a careful selection of local wines. The house highlights organic, biodynamic and natural wines in its cave and oenothèque under the direction of co‑owner sommelier Justine Heuzé, who is described as passionate and exploratory in her selection. Several plated compositions — including seafood preparations and a Breton‑inspired bouillon — illustrate the seasonal, seafood‑driven tasting menus. The site displays distinctions and memberships including Disciples d’Escoffier, College Culinaire de France, JRE and its Michelin one star, and guests are invited to trust the team at lunch and dinner. An intimate, human‑scale dining room of only 20 seats creates a calm, sensory‑focused atmosphere. Decor is sober and classy. The cuisine is modern and intuitive, with unique, seasonally driven menus that emphasise refined technique and sensory profiles. Chef Yann Tournier leads the kitchen. Specialties include Barbue côtière et jardin floral (coastal brill with floral garden); Terre d’Eden et bouillon kig ha farz (Breton‑style broth with shellfish and pleurotes); Langoustine Vent des Alizés; Parchemin Marin; and Pollinisation de miel et coulis végétaux (honey and vegetal coulis dessert).
