La Taulada

La Taulada is the restaurant of the historic Hôtel Dupont in Castelnau‑Magnoac, relaunched under the generous name "La Taulada." The kitchen combines a modern approach to cooking with a deep respect for regional terroir, revisiting classic local recipes with sensitivity and contemporary technique. La Taulada is recognised by the Michelin Guide (selected). Housed in the restored two‑century Hôtel Dupont, the restaurant occupies a setting that evokes local architectural heritage after more than ten years of closure and municipal restoration. It offers a convivial, host‑oriented atmosphere and a terrace with views over the Lac de Castelnau‑Magnoac, welcoming guests to share a communal, generous meal. The cuisine revisits traditional southwestern French terroir recipes through contemporary techniques, with an emphasis on seasonal ingredients and a rigorous selection of local producers. The restaurant works with Les Jardins de Mamou, Fromagers du Mont Royal, Le Noir de Bigorre, Maison Barthe and Famille Caubet, balancing classic flavours with modern composition to prioritise gastronomic pleasure and guest comfort. Chef Matthias Huillet trained at the Lycée des métiers d’hôtellerie et de tourisme d’Occitanie and enriched his formation in kitchens including Le Puits Saint Jacques, En Marge, Château Eza and La Ferme de l’Hospital, where he learned high standards of French culinary art and product quality. Specialties include Le magret cocotte; Gravlax de truite; Ris d'agneau en persillade; Loup de Méditerranée; and Saint‑Jacques en tempura.
