The cuisine, led by chef Bruno Katz, focuses on simple yet technically precise dishes prepared with quality ingredients. Katz, a 28-year-old New Yorker of Argentine descent raised in Búzios, began his culinary journey as a teenager and trained under chefs such as Sonia Persiani, Roberta Ciasca, Claude Troisgros, and Daniel Boulud. He became Nosso’s head chef at 25 and has earned distinctions including Forbes Young Talent Revelation (2018) and awards from Revista Época and Prazeres da Mesa. His cooking delivers enjoyable contemporary fusion without fuss, emphasizing memorable everyday moments and a communal dining experience.
