Rebelle is a young, accessible fine‑dining restaurant in Marke near Kortrijk. Since October 2017 Martijn Defauw and Tessa D'haene have run it with their passionate team. It offers 3‑, 6‑ and 7‑course tasting menus with wine and non‑alcoholic pairings curated by knowledgeable sommeliers, holds ONE_STAR recognition from the Michelin Guide and makes hospitality, simplicity and attention to detail central. Housed in a recently renovated historic workers' house that was once the oldest house in Marke, the dining room is warm, relaxed and convivial. Minimalistic decor carries a small touch of shine and character, seating is arranged for cozy dining and an outdoor terrace is used depending on the weather. The kitchen focuses on contemporary, creative French cuisine with a product‑focused, minimalist approach. It highlights seasonal ingredients sourced through close relationships with local producers and emphasizes soft textures, contrasting temperatures and surprising flavour combinations. Specialties include Hamachi with rhubarb and red shiso; Turbot (brill/griet) with lobster béarnaise and artichoke barigoule (togarashi); Veal sweetbreads with Iberico 'Bellota' and morels; Pigeon 'Anjou' with beetroot, red cabbage and vineyard peach; Langoustine XO; Cassis, cocoa flower, yoghurt and 25‑year balsamic (dessert).
