Restaurant LALIQUE holds two Michelin stars and occupies a 17th‑century main building with a modern extension by Mario Botta overlooking vineyards. Tableware by Maison Lalique — crystal leaves, bespoke porcelain and ornate service pieces — frames a refined sensory experience. An intimate, softly lit historic dining room adjoins a light‑filled extension with a metal‑framed glass roof. Decor features elegant table dressings; seating is limited to 40 covers. Cuisine is modern, experimental and built around deep exploration of Sauternes and seasonal produce. Techniques include infusion, maceration, fermentation, crystallization and poaching; the kitchen uses grape must, lees and vine elements in savory and sweet preparations. Pastry pairs desserts and petits fours with Sauternes, and chef sommelier Logan Guignot‑Truffley created a digestif ritual to conclude meals. Jérôme Schilling, Head Chef, earned a second Michelin star (2022), was named Meilleur Ouvrier de France (2023) and coached the French Bocuse d’Or team (2025).
