Da Costa is a Northern Italian–inspired restaurant at Hauser & Wirth Somerset in Bruton that brings Italian bonhomie and family‑focused dining to the Somerset countryside. It is named for Artfarm co‑founder Iwan Wirth’s maternal grandfather from Rivamonte Agordino in the Veneto, whose small village restaurant provides the conceptual origin. The kitchen explores traditional northern Italian recipes — antipasti, homemade pastas, risottos and daily specials — with a strong emphasis on seasonal, locally sourced ingredients from Durslade Farm and the restaurant’s walled garden, much of which is grown on site; the estate also includes a vineyard producing the Maid of Bruton wines, orchards and woodlands used for foraging and charcoal. Cooking over a central wood‑fire stove and grill is a key technique. An integrated art and design programme, with a centrepiece stove crafted by local artisans, gives the dining room an artisanal character; the space positions itself as a destination for food, family stories and connections to the surrounding farm and art estate. The reimagined interior, courtyard garden and artworks drawn from Hauser & Wirth’s collection create a warm, gallery‑like atmosphere; the dining room and courtyard were designed with contributions from Piet Oudolf and Laplace and include open views of the kitchen and garden. The cuisine focuses on Northern Italian recipes executed with Italian techniques — homemade pastas, risottos and wood‑fired dishes — using seasonal, locally grown produce from the walled garden and Durslade Farm; daily specials are often cooked over fire, blending Italian flair with quintessential English ingredients. Specialties include homemade rigatoni and bigoli, wood‑fired grill dishes such as estate venison and Durslade beef, walled‑garden radicchio risotto, slow‑roasted porchetta for Sunday lunch, tiramisù (individual or sharing) and gnocco fritto with mortadella.
