El Origen

El Origen is located in the historic Plaza del Justicia in the center of Huesca, Spain. It serves traditional Aragonese cuisine with a modern, innovative approach, featuring seasonal dishes prepared using primarily small local producers from the Aragon region. The menu evolves seasonally and includes tasting menus alongside regional specialties such as Jamon de bodega with garlic and toasted bread, half roasted IGP ternasco shoulder with pan-fried potatoes, and cod ajoarriero style with chlorophyll oil. The restaurant’s interior offers two main dining areas: a bright ground floor bathed in natural light with ochre and stone tones, and a more intimate upper floor ideal for family or business gatherings.
