Impressions is an intimate, modern fine-dining restaurant in La Rochelle's historic centre, facing the cloister of the Dames Blanches. The chef offers several set menus and tasting options that highlight daily market returns and contemporary reinterpretation of ingredients. The restaurant is recognised by Michelin (Selected) for its modern, product-focused cuisine. An open kitchen and a compact dining room form a "small theatre" where noble materials and elegant volumes create a warm, refined atmosphere. Contemporary French cuisine focuses on seasonal produce with clear, flavour-focused preparations and precise research of flavours; the kitchen relies on small local producers and adapts the menu to daily inspiration. Chef David Etcheverry brings 18 years of Michelin-starred kitchen experience in Brittany and leads a young, dynamic brigade in kitchen, dining room and sommellerie. Specialities: royale of brown shrimp with celery caviar and radish; chestnut gnocchi with fig and aged Parmesan; foie gras ravioli with black truffle, root broth and lemongrass; monkfish with sumac, yellow beet and Bordelaise; line-caught pollock with pancetta, salsify and black lemon; Kintoa pork rack with harissa and galangal carrot; roasted quail with cabbage and grilled peanut.
