La Conciergerie

La Conciergerie is a gastronomic restaurant. The kitchen presents a reduced, regularly renewed carte as multi-course set menus ranging from two to five courses. Menus change with the seasons, and wine pairings are offered to complement them. La Conciergerie has been selected by the Michelin Guide. It sits in the park of the Château de Bac-Saint-Maur on the banks of the Lys in Sailly-sur-la-Lys. The dining room is nestled in greenery within the château park, reinforcing the restaurant’s connection to the local landscape and producers. Décor and seating cultivate a refined, intimate gastronomic atmosphere within a tranquil, leafy environment. The cuisine is modern and terroir-driven, built on fresh, local and seasonal products in close collaboration with regional producers. The kitchen emphasizes creative, refined preparations while remaining respectful of seasonal cycles and local sourcing. Guillaume Riffaut leads the kitchen. Specialties include smoked scallop with spinach; Skrei cod with buttermilk and parsnip; duck from La Mère Miche prepared two ways with beets; beef from Ferme Delmotte preparations; a vegetable plate from Ferme Devos; and a cheese trolley by Le Coin des Fromages.
