L'ExtrA

L’ExtrA is an inclusive, eco-responsible gastronomic restaurant in Reims pairing high culinary standards with a social mission. As a Société Coopérative d’Intérêt Collectif (SCIC), it employs staff with mental disabilities in kitchen and dining-room roles, pairing professional training with meaningful work opportunities. Founded and co‑led by Gonzague Peugnet and Matthieu Saint‑Guilhem, the project began in 2019, was mentored by chef Arnaud Lallement in 2021, welcomed chef Philippe Joly in June 2022 and formally opened in May 2023. Michelin Guide selections began in 2023/2024 with continued recognition into 2025, and the restaurant earned local awards in 2024. The dining room is warm, elegant and convivial, with pleasant lighting, soft music and greenery; acoustics let guests converse comfortably, and staff smile, creating a welcoming, positive mood. The kitchen serves contemporary French / modern cuisine, offering creative, refined dishes that showcase fresh, local, seasonal produce sourced via short supply chains; menus are limited and meticulously composed to balance flavour, texture and presentation. Philippe Joly is chef. Complimentary amuse-bouche: carrot with orange, fresh ginger, turmeric and coriander; seasonal dishes featuring Champagne-region produce; a meticulously designed limited tasting-style menu; and an extensive selection of champagnes and wines.
