The partner's word

Arkhe is a small restaurant in Lisbon established in 2019 by two restaurateurs who prioritize hospitality as the core of their craft. The name derives from the Greek concept "arkhê," symbolizing the fundamental principle and origin of all things. The restaurant’s philosophy centers on a profound respect for nature and seasonality, which guides its sustainable and meaningful culinary creations. The kitchen at Arkhe is entirely plant-based, offering a modern and innovative tasting menu that highlights vegetables through vegetarian and vegan recipes. Chef João Ricardo Alves, born in São Paulo with Portuguese roots, brings classical French and Italian training combined with extensive experience in vegetarian and plant-based cuisine gained during his time in Asia. His passion and creativity shape the restaurant’s distinctive vegetable-focused dishes. Alejandro Chávarro, a French-naturalized Colombian with a background managing prestigious Parisian dining rooms and wine cellars, joined as co-owner in 2020. Arkhe serves a single, seasonally driven tasting menu at dinner, shared by the entire table. The restaurant is recognized by the Michelin Guide and 50 Best Discovery. It also extends its wine expertise through Arkhave, a wine club offering curated wine and no/low-alcohol subscriptions, masterclasses, wine dinners, and exclusive allocations for members. Set in a small Lisbon house, Arkhe offers an intimate and refined fine-dining atmosphere focused on a carefully curated dinner experience. The cuisine is exclusively plant-based, combining classical techniques with modern creativity to deliver seasonal, vegetable-driven dishes. The menu includes vegetarian and vegan options, complemented by wine and no/low-alcohol pairings crafted to enhance the tasting journey.
