Since its establishment in 2001, it blends tradition with modernity and is listed in the Michelin Guide and Guía Repsol 2026. The restaurant crafts a gastronomic experience rooted in Salmantine traditions, local markets, and seasonal ingredients, all interpreted with contemporary creativity under the direction of Chef Juanma Melchor. Chef Melchor emphasizes slow, intricate preparations that highlight flavors and aromas through artisan techniques, showcasing premium local produce such as organic vegetables, Charra beef, Guijuelo Iberian pork, and fresh fish.
