La Diligence

La Diligence is a charming country-house hotel restaurant in La Ferté-Saint-Cyr, housed in a restored former relay house. Laurence and Jérôme restored the building with respect for its heritage and run the house with conviviality and simplicity. The restaurant is referenced in the Michelin Guide and appears in La Liste and Logis hôtels' "Table distinguée", and its approach is distinctly garden-to-plate. The restaurant offers a very warm, contemporary dining room and an attractive shaded terrace opening onto the hotel's garden and courtyard; in summer guests can dine beside the heated outdoor pool. The setting is intimate and family-oriented and blends historic charm with modern, comfortable décor. The kitchen focuses on contemporary French cooking with a seasonal, market-driven philosophy, privileging short supply chains and producing natural, vegetable-forward dishes that pay tribute to the Loire terroir; menus change with the seasons. Jérôme Farault is Chef Maître Restaurateur, trained in Paris with Michelin-starred chefs and a member of the Collège culinaire de France. Menus served for the entire table comprise Menu en 2 temps (two courses), Menu en 3 temps, Menu en 4 temps and Menu en 5 temps tasting menu; the house also offers vegetable- and garden-inspired dishes from the hotel's potager and orchard, which supply vegetables, herbs and edible flowers and support on-site beehives, plus a Seasonal à la carte (Carte de Saison).
