Ingredients and preparations are made from scratch where possible — housemade sausages and sauces, scratch sides, house‑baked brioche and tallow tortillas — and the menu spotlights Certified Angus Beef brisket and whole‑meat pre‑orders. The team trained with Texas pitmasters; accolades include Critic’s Choice Best BBQ (Orlando Sentinel, 2022), Orlando Magazine readers’ Best Food Truck (2023), features in Texas Monthly and a MICHELIN Guide Florida 2025 Bib Gourmand. Cuisine follows Central Texas–style barbecue: low‑and‑slow, all‑wood smoking with minimal seasoning so technique and meat predominate. Briskets smoke up to 16 hours and rest 10–12; pulled pork and other meats smoke and rest for many hours; house sausages are double‑smoked.
