MANTA is a contemporary restaurant by the sea located at The Cape, a Thompson hotel in Cabo San Lucas. Conceived by the Mexican chef with a Michelin star, Enrique Olvera, it combines the tranquil elegance of the desert with the vastness of the Pacific Ocean, offering panoramic views of the sunset over the iconic Arch of Cabo. MANTA's cuisine fuses contemporary Mexican cooking with Peruvian and Japanese influences. Under the direction of Chef de Cuisine Abisai Sánchez, the kitchen utilizes sustainable, locally sourced ingredients from Baja California to create a seasonal menu that highlights balance, precision, and regional identity. Featured dishes include sashimi with yellow chili and wasabi, Peruvian ceviche, shrimp aguachile, octopus anticucho with pasilla mixe and chorizo mayonnaise, Korean fried chicken with barbecue and pickled radishes, steamed bun with suckling pig cochinita, and chocolate sponge cake with peanut and tamarind ice cream.
