Chez Fonfon

Chez Fonfon is a historic restaurant located in the small fishing port of Vallon des Auffes in Marseille, celebrating 70 years of culinary tradition. Founded in 1952 and passed down through four generations, it stands as a monument to local culture and the region’s fishing heritage. The restaurant specializes in bouillabaisse, a dish deeply rooted in Marseille's history, prepared according to a family recipe that adheres to the charter of Marseille chefs by not using lobster and including at least four species of Mediterranean fish. The cuisine focuses on fresh fish caught daily by local boats, including scorpionfish, rockfish, goatfish, mullet, conger eel, wrasse, and sometimes turbot. The bouillabaisse broth is made with garlic, saffron, celery, fennel, herbs de Provence, cayenne pepper, and olive oil, served with potatoes, rouille, aioli, and croutons drizzled with saffron olive oil. Part of the Alphonse & Jean group, Chez Fonfon embodies a way of life shaped by fresh fish and the iconic spots of Marseille.
