Céna

Céna is a sincere, ethical and exclusive gastronomic restaurant born from a collaboration with Groupe Tandem. The team consciously values each actor involved in the meal. Céna offers seeded, plantable menu cards as a shared souvenir. The restaurant holds three toques, the Grand de Demain prize and a 15/20 note. The dining experience is designed to be immersive and thoughtfully detailed, offering a relaxed, sharing‑oriented atmosphere; photography on the site suggests a modern, refined interior with curated decor and close attention to presentation. Modern gastronomic cuisine emphasises regional products and seasonal sourcing. Tasting menus at lunch and dinner include curated wine pairings, and dishes are terroir‑driven to highlight local producers and artisanal partners; menus can be adapted for dietary needs. Clément Briand‑Seurat is the chef. He trained with Gilles Goujon, worked in prestigious gastronomic kitchens including in London, and returned to his native region to found Céna; he was named Jeune Talent Occitanie 2022 by Gault & Millau. Specialties include Thau Lagoon (shellfish and crustaceans); The Mediterranean — “memory of a catch” (meagre); a Brie de Meaux triptych with Melanosporum truffle; Pauline’s garden carrots (potager); and verbena baba “Poma” with Saint‑Jean‑de‑Védas honey.
