De Mangerie is long-established in Bruges and traces its identity to the city’s medieval trade in exotic spices. The kitchen reworks bestsellers from the past 20 years, favouring local produce where possible and supplementing with high-quality ingredients sourced internationally. The restaurant is noted by the MICHELIN Guide (Selected) and presents a balanced menu for occasions and casual dining. The dining room is a cosy urban melting pot where locals, foodies, businesspeople and tourists meet; it feels holiday-like on arrival and suits festive occasions and casual meals. Cuisine is refined international cooking: local Belgian dishes reworked with Asian and oriental influences. Menus are travel-inspired and emphasise technique, origin and seasonal sourcing. Kristof Deprez leads the kitchen and insists on a hands-on philosophy: chefs must visit a dish’s country of origin, observe harvests, learn local techniques and understand the reasons behind each preparation. On Friday and Saturday the kitchen serves a focused 4- or 5-course dinner with a choice of fish, meat or vegetarian for each course.
