Holodeck

Holodeck is a modern gastronomic restaurant at Château de Chambert. It offers set tasting journeys — Petit Holodeck, Holodeck and the all‑inclusive Holodeck Destination — with wine pairings by Lin Liu MW. The estate produces house wines from certified biodynamic agriculture and traces winemaking to 1690; the restaurant stages themed seasonal events, notably a dedicated truffle season from January to March, and hosts collaborations and special dinners including four‑hand and wine‑pairing evenings. An open kitchen faces the dining room; architecture by Stéphane Deligny and interior design by Kate Hume shape the refined space. A terrace delivers sweeping vineyard views and an elegant, modern, convivial atmosphere. The season‑driven contemporary cuisine emphasises natural, ethical and sincere cooking techniques and is complemented by global flavour influences. Chef Baptiste Moura composes menus that draw on ingredients from the estate’s fields, forests, rivers and causses and occasionally introduces secret or bespoke ingredients. Specialties include the Holodeck Destination all‑inclusive tasting menu, the Holodeck seasonal tasting menu, the Petit Holodeck set menu, a Seasonal Truffle menu (January–March), Saint‑Jacques with Lalbenque black truffle and the Chambyrrh vintage‑style cocktail.
