An eight-seat counter is arranged like a stage, with design and seating that emphasize theatrical, close-up presentation of each course. Koya offers a contemporary interpretation of Japanese cuisine, presented exclusively as a multicourse tasting menu. The cooking emphasizes hyper-seasonality and the Japanese concept of shun (旬), pairing ingredients in creative combinations that blend Eastern and Western flavors. Eric Fralick is chef and owner.
