L'Aparté

L'Aparté is a Michelin-starred gastronomic restaurant on the edge of Toulouse. Opened 2015 by chef Jérémy Morin and wife Romina, Morin trained in Paris at Le Scribe, Le Bristol and Le Meurice under Yannick Alléno and Éric Fréchon. Born 1978 in Calvados, he draws on Norman roots and adopted local terroir to create inventive, fresh, elegant land-and-sea dishes. The kitchen emphasises carefully chosen producers and traditional flavours updated with modern techniques, aesthetics and subtle combinations; the team, fronted by Romina Morin, presents warm professional service. The dining room, renovated by interior designer Laurence Gil, occupies a renovated building with harmonious contemporary design and displays exposed brick walls, black parquet and sober‑chic furniture; tables are dressed elegantly; a quiet, leafy terrace with fountain opens in season. Modern gastronomic French cuisine blends land and sea, rooted in Norman influences and local terroir, with inventive and refined preparations that update traditional flavours. Jérémy Morin is the chef. Specialities include Menu Harmonie (gift box), Menu Dégustation (gift box/tasting), creative land-and-sea dishes, lobster-focused events, truffle and game showcases, and extensive wine cellar with pairings.
