Las Quince Letras

Las Quince Letras, established in 1992 by Celia Florián and Fidel Méndez, is a restaurant located in the historic center of Oaxaca. It showcases the rich culinary traditions of Oaxaca through dishes crafted from locally sourced ingredients such as corn, mezcal, and native chiles, with several vegetables and herbs grown on-site. The kitchen specializes in traditional Oaxacan and regional Mexican cuisine, serving authentic moles—including mole negro, mole coloradito, and mole almendrado—alongside tamales, molotes de plátano, taco placero, and other regional specialties. Chef Celia Florián, who learned to cook from her mother and grandmother, leads the kitchen with deep familial and cultural ties to Oaxacan farming and gastronomy. She actively promotes the preservation of Oaxaca’s culinary heritage through her role in the Association of Traditional Cooks of Oaxaca. The restaurant has received a Bib Gourmand from the Michelin Guide and multiple distinctions in national and international gastronomic awards.
