Les Preuves Du Contraire is a fully plant-based fusion restaurant in Bordeaux, run by chefs and co-owners Lisa and Tatiana. The concept is straightforward but not simple: creative, flavor-forward vegan cooking that draws on local products and accommodates a wide range of dietary needs, from gluten-free to peanut-free. The menu has real personality. The Croqu'iel reworks the classic croque with plant-based ham, melted cheese, young shoots, and Malabar pepper. The brochettes de boulettes come with a homemade satay sauce built from peanut butter, coconut cream, cumin, coriander, mild chili, and tamari. There's also a salade cezar that layers crispy plant-based chicken supreme with lacto-fermented vegetables, Caesar sauce, a seed mix, and toasted bread — more composed than your average salad.
